Wheat Alternatives

I made pizza with spelt flour tonight. Its a grain that's been farmed for many centuries. A lot less gluten and a lot more fibre than wheat. It mixes like regular flour! I highly recommend it.

Sub it in this recipe. Seamless.

Quick Cracker Cake

This one is thanks to my mom. These never lasted long when she made them!

 

1 cup of semi sweet chocolate chips
½ cup peanut butter
1 ½ cup icing sugar
1 tablespoon butter
2 teaspoon instant coffee
1/3 cup boiling water
1 teaspoon vanilla extract
1 egg
3 cups of crumbled, unsalted soda crackers
Salt to taste

Melt chocolate chips in double boiler or over low heat. Blend peanut butter, icing sugar, butter and salt in. Combine instant coffee and boiling water and stir into chocolate mixture.

Remove from heat, cool, stir in egg, crackers and vanilla. Mix well. Pack firmly in greased 8 inch brownie pan. Chill in refrigerator for several hours.

Cut into squares.

Egusi with Efo

Egusi is a melon seeds. Efo is spinach (as far as I can tell). My sister's husband is Nigerian and cooks this all the time. I tried it for the first time today and it turned out yummy! You can find the recipe here: http://www.motherlandnigeria.com/recipes.html#egusi_efo

Oh, and I am pretty sure that Egusi seeds taste almost identical to good old pumpkin seeds. At least I can't tell the difference. I think it would be safe to substitute.

Fantastic Fiddleheads

For those of you who haven't had them, these are the tastiest greens on the planet. We call them fiddleheads because of their resemblance to the musical instrument.

They are a type of Ostrich Fern. Not all are edible, so make sure you know what you're doing before you go and pick them yourself. Maritimers are the most avid consumers of this delectable fern.

TWO-POTATO SALAD WITH MUSTARD DRESSING

Here's the recipe I was telling you about Moriah! Lemme know if you try it and like it.

prepared in 45 minutes or less.

1 pound boiling potatoes
(preferably yellow-fleshed),
quartered lengthwise and cut
crosswise into 3/4-inch pieces
1 pound sweet potatoes,
quartered lengthwise and cut
crosswise into 3/4-inch pieces
1 tablespoon white-wine vinegar
2 tablespoons Dijon-style mustard
1/4 cup olive oil
1/4 cup finely chopped onion
1/4 cup finely chopped red bell
pepper
2 tablespoons finely chopped
sweet gherkin

In a steamer set over boiling water arrange the boiling potatoes, top them with the sweet potatoes, and steam the potatoes, covered, for 10 to 12 minutes, or until they are just tender. Transfer the potatoes to a bowl and let them cool. In another bowl whisk together the vinegar, the mustard, and salt and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. Add the dressing to the potatoes with the onion, the bell pepper, and the gherkin and combine the salad well.

Serves 6.

Aged Irish Cheese with Guinness

As most of you know, I live by St. Lawrence Market. I go there most weekends and I try a new kind of cheese each time I go. This week's selection is seen below. Aged Irish Cheese with Guinness. It looks totally fun, and it tastes even better! I recommend this for your next wine and cheese. Flavour is middle of the road so most people will like it. 4/5 stars.

Homemade Mrs. Dash type thingy

Made this tonight. I hope its good! Great for people that need to cut down on sodium in their diet!

Seasoning Shaker
1/2 tsp. cayenne pepper
1 TBSP garlic powder
1 tsp. basil, ground
1 tsp. marjoram, ground
1 tsp. thyme, ground
1 tsp. parsley
1 tsp. savory
1 tsp. mace
1 tsp. onion powder
1 tsp. black pepper
1 tsp. sage

Pizza Dough

I just made pizza. Friends always marvel when they see I make the dough. Well its super easy! Here's the recipe:

Pizza Dough

425 �F - 20 minutes

Yeast Mixture
3/8 cup warm water
3/4 t sugar
1/2 T dry yeast

1 1/2 cups flour
1 1/2 T oil
1/4 cup warm water
3/4 t salt

1) For the yeast mixture, add sugar to water and stir to dissolve. Add yeast on top of the water. Let sit till it foams.
2) Blend flour and salt in mixing bowl.
3) Pour in yeast mixture, oil and warm water.
4) Mix until it forms a ball.
5) Turn dough on lightly floured surface. Knead for 10-15 mins.
6) Spread on pan. Add toppings and bake.
